B R O W N I E   

Probably the best brownie recipe ever? Well we would say that wouldn’t we? I mean over the years since Cafe Cotton first opened it’s doors we’ve probably made 25,000 portions! That’s a lot of brownie. Probably enough to stretch from here to…just scroll down to see the recipe.

 

If yours doesn't look like the one in the picture don't worry! Nor does our most of the time - but it tastes so yummy who cares what it looks like! 

I N G R E D I E N T S   

300g 70% Dark Chocolate broken into small pieces 

175g Salted Butter

230g Caster Sugar

175g Soft Brown Sugar

150g Plain Flour

50g Cocoa Powder

Pinch Salt

 1 teaspoon Vanilla Essence 

4 Medium Eggs

M E T H O D   

Melt 175g of the chocolate in a large pan with the butter on a gentle heat

Add both types of sugar to the chocolate when it has melted

In a large bowl, weigh the flour, cocoa powder, and salt together, whisk well

Whisk eggs in another bowl with the vanilla essence. 

Stir into the chocolate mixture, then fold in the flour mixture until well combined

Add the remaining 125g of chocolate to the brownie mixture and stir well to combine

Place mixture into lined tin (approx. 30 x 20cm) and bake at 165c for 35 minutes

Remove from the oven and allow to cool

Cut into 20 portions or 10 if you're greedy!
